Ingredients
Method
Season salmon and let it rest for about 10 minutes
Preheat smoker to 225F (105C)
Put salmon in the smoker
Optional Glazing: put all ingredients together and mix for at least 1 minute
Start glazing at 100F (38C) and set smoker to 200F (95C)
Remove from smoker when salmon reaches 145F (62C)
